Director of Food and Beverage

Position Summary  

Under occasional supervision, the Director of Food & Beverage plans and executes catering, hospitality, and concessions operations for Blumenthal Arts. The Director provides visionary leadership for the Food & Beverage department and validates the work of the Food & Beverage team. The Director ensures compliance with regulations, policies, procedures, standards of service, quality of goods sold, and the presentation of hospitality is creative and appealing. The Director partners with multiple departments to ensure positive outcomes for all stakeholders and delivers the highest level of customer service to all. This position may require 40+ hours of weekly availability including work at night, on weekends, and holidays. 

 

Duties & Responsibilities 

Strategic 

  • Provide strong visionary leadership for the Food & Beverage Manager, Supervisors, and Bartenders. Review the work of Food & Beverage staff for completeness and accuracy, evaluate performance, provide appropriate feedback, offer training, instruction, advice, and assistance. 

  • Build strong partnerships with Programming, Accounting, Development, Education, Technical Production, and local caterers. 

  • Prepare or review various records and reports including contracts, show riders, sales summaries, purchase orders, check requests, payroll, performance appraisals, catering estimates, and more. 

  • Identify and develop new forms of revenue. Test and/or pilot F&B products, programs, concepts and services. Identify operational implications prior to full-scale rollout.  

  • Create and implement product promotions. Partner with Marketing to create menus and collateral. 

  • Evaluate and recommend to Sr. Director of Venue Operations department equipment purchases. 

Financial 

  • Prepare and administer Food & Beverage Department annual operating budget.   

  • Monitor sales and expenses to deliver budgeted results and maintain industry-appropriate costs, efficiencies and quality.  

  • Maintain department petty cash.   

  • Complete expense reports and vendor payments in a timely manner. 

  • Confirm the settlement of F&B related expenses in the system of record. 

Operational 

  • Manage the day-to-day of the Food & Beverage operation, including set up of shows and events, ensure concession stands are properly stocked, backstage hospitality, internal meetings, and more. 

  • Lead, coach, and develop the Food & Beverage Manager and Supervisors. 

  • Provide appropriate staffing levels for performances, events, and private functions. 

  • Verify that staff are appropriately trained on alcoholic beverage laws and regulations and ensure compliance with all legal requirements. 

  • Book local bars or restaurants to serve as a party venue for select events. 

  • Ensure compliance with all legal standards and regulations. Responsible for ensuring Blumenthal Arts’ inspections conducted by regulatory agencies are successful and receive high ratings.  Maintain all bars, kitchens, and food and beverage storage areas ensuring they are clean and organized.   

  • Develop and implement Food & Beverage Department policies and procedures. 

  • Operate a variety of equipment such as a computer, printer, copier, ice machine, coffee machine, kitchen appliances. 

  • Perform related duties, as required. 

Qualifications

Education and Experience 

  • Requires a bachelor's degree in hospitality, or a related field, and 10 years professional experience in food and beverage, hospitality management, restaurant management or a related field – including 5 years of leadership experience, OR,  

  • An equivalent combination of education, training and experience that provides the required knowledge, skills and abilities.  

  • Must meet North Carolina Alcohol Permit requirements
